 Mini Corn Dogs. My kids were seriously impressed with these fun little snacks. In fact, I heard “This is the best thing ever, Mom.” If you have any corn dog enthusiasts in your house, I think they’ll love them too. This is the kind of thing I know my kids will be requesting over and over again!


  • ½ C. Melted butter unsalted
  • 2 Large eggs
  • ¼ C. Powdered sugar substitute
  • 1 C. Buttermilk
  • ½ tsp. Baking soda
  • 1 C. Yellow cornmeal
  • 1 C. All purpose flour
  • ½ tsp. Salt
  • 6-8 Hot dogs sliced into 1 inch pieces

How To Make Mini Corn Dogs:

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, combine the melted butter, eggs, sugar substitute, buttermilk, baking soda, cornmeal, flour and salt until a smooth batter has formed.
  3. Spoon the batter into the sections of well greased mini muffin tins, filling them about ¾ of the way full.
  4. Place a piece of hot dog into the center of each filled section of the mini muffin tin.
  5. Bake for 10-12 minutes until lightly browned and cooked through
